Hello, fellow foodies and flavor enthusiasts! Today, we’re taking the humble totcho – that perfect fusion of crispy tater tots and the savory goodness of nachos – to a whole new level by introducing the smoky, mouthwatering charm of leftover smoked pulled pork. Brace yourselves for a totcho recipe that’s not just a meal but a flavor fiesta for your taste buds!

Why Totchos? Why Pulled Pork?

Totchos, the delightful love child of tater tots and nachos, have taken the culinary world by storm. Crispy on the outside, fluffy on the inside – tots make the perfect canvas for a flavor explosion. Now, imagine elevating that canvas with the rich, smoky allure of leftover pulled pork. The marriage of textures and tastes is nothing short of spectacular.

The Art of Leftover Magic

One of the beauties of this recipe lies in repurposing that delectable smoked pulled pork lingering in your refrigerator. It’s a second act for your barbecue masterpiece, transforming it into a new and exciting dish that your taste buds won’t soon forget.

Ingredients for Totcho Brilliance:

1. Tater Tots: The crispy foundation that will carry the weight of your totcho masterpiece.

2. Leftover Smoked Pulled Pork: The star of the show, bringing smoky, savory goodness to every bite.

3. Cheese: Shredded cheese spread perfectly over the top of this culinary creation.

4. Pico de Gallo (Optional): Fresh tomatoes, onions, cilantro, and a squeeze of lime to add a burst of freshness.

5. Sour Cream (Optional): A cool, tangy companion that complements the richness of the pulled pork.

6. Avocado Slices (Optional): Creamy slices of avocado to add a buttery texture to the totchos.

7. Green Onions (Optional): Sliced green onions for a mild, savory kick.

Crafting Your Totcho Masterpiece: Step-by-Step

  1. Bake Those Tots: Arrange your tater tots on a baking sheet and bake until golden brown and crispy.
  2. Heat Up the Pulled Pork: Warm up your leftover smoked pulled pork in a skillet or microwave.
  3. Cheese Extravaganza: Melt your favorite cheese (cheddar, Monterey Jack, or a blend) into a smooth, irresistible sauce.
  4. Assemble the Totchos: Spread the crispy tots on a platter, generously layer on the pulled pork, drizzle with cheese, and sprinkle with pico de gallo.
  5. Final Flourishes: Dollop with sour cream, arrange avocado slices, and sprinkle with green onions for a finishing touch.

What is the cost??

Totchos are an excellent budget friendly meal that is delicious for the whole family. The best part is that you can make these with items you probably have in your fridge already! I found these prices at my local Tom Thumb in Texas.

Tator Tots- $3.42 for a 2lb bag.

Pork Butt- I found this particular butt on sale for $0.96 a pound. That means this giant cut of meat was just over $10!

Cheese- $3.98 for 16oz of cheese.

Sour Cream- $2.68

Avacado- $0.50 each

Pico- $3.18 for a carton

We had a lot of this stuff with us already, but if you had to buy everything from scratch the total cost would only be $23.36! This also fed my entire family of 6 for an entire week!

Conclusion: A Totcho Triumph

Whether you’re hosting a game day gathering, a family fiesta, or just treating yourself to a culinary adventure, these Smoked Pulled Pork Totchos are a guaranteed crowd-pleaser. They’re easy to make, a joy to devour, and a testament to the magic that happens when leftover brilliance meets totcho ingenuity. The best part is you can make this meal with a minimal amount of money!

Get ready to embark on a totcho journey like no other. Your taste buds will thank you!

Happy totcho-ing, Kaydon
